Judging criteria for different grades of dried shiitake mushrooms

The grade of dried shiitake mushrooms is mainly based on their appearance, size, shape, color, fragrance and dryness. Here are some common judging criteria:

1. Appearance

Integrity: High-grade dried shiitake mushrooms require complete mushroom bodies, without damage, insect bites and mold spots. Low-grade dried shiitake mushrooms may have partial damage or defects.

2. Size
